Easy Miso Kombu Salmon Rice: A Beginner-Friendly Dinner (Copy)
Hey friend, it’s Erica here. Some days, after a busy, full-on schedule, the last thing I want to do is stress over cooking dinner — can you relate? That’s why I created this miso kombu salmon rice recipe, a hands-off meal that feels like care for yourself without the fuss.
When I’m making this at home, I rely on simple whole foods packed with nutrients that keep me energized and glowing. This dish is loaded with protein from salmon, fibre from cabbage and mushrooms, and those beautiful omega-3 fats that support brain and skin health. Plus, the miso and kombu add that cozy umami flavor that feels like a hug in a bowl.
If you’re newer to cooking, here’s a little tip that always helps me get perfect rice: use equal parts rice and water—1 cup of rice to 1 cup of water. It’s foolproof.
Here’s what you’ll need:
1 cup rice
1 cup water (equal to rice amount)
1 cup chopped cabbage
1 cup sliced mushrooms
1 salmon fillet, sliced
1-2 tablespoons miso paste
1 tablespoon mirin
Salted kombu, to taste
How I make it:
I always rinse the rice until the water runs clear—that gets rid of extra starch and makes the rice fluffy. I put it in my steamer or pot with 1 cup of water.
Then I layer chopped cabbage and mushrooms over the rice—it cooks gently and stays light.
Next, I add thin slices of salmon on top.
I steam everything for about 30 minutes, till the rice is perfect and the salmon is cooked through.
While that’s happening, I mix my miso paste and mirin to make a simple seasoning sauce.
Once it’s done, I stir in salted kombu to add that luxe salty flavor. Then I mix it all up and dig in.
What I love about this recipe is how easy it is to make—even on the hardest days—but still so nourishing. And it’s mild enough for my kids to enjoy too, which is a win in my book.
